Beef Tataki with Teppanyaki sauce

INGREDIENTS
- 1 Black Angus sirloin steak
- 1 tsp Maldon sea salt flakes
- 1 tsp Maldon perfectly crushed pepper
- 1 tbsp Kikkoman toasted sesame oil
- Teppanyaki sauce:
- 2 tbsp Toasted sesame oil
- ½ cup Kikkoman soy sauce
- 3 tbsp Kampos Chiou orange juice
- 2 tbsp foodhaus blossom honey
- 2 tbsp Ardo ginger
- 1 spring onion, sliced*
METHOD
Make the teppanyaki sauce
1. Add sesame oil, soy sauce, orange juice, honey, and ginger to a small pot and bring to a gentle simmer until it is reduced to its half. Set aside to cool, but still should be warm.
2. Season the beef fillet with salt and pepper and treat it with a little sesame oil. Leave it to rest for about 10 minutes at room temperature.
3. In a frying pan add the sesame oil and at medium heat, evenly sear the beef for 2 minutes on each side. It should be rare on the inside, sear it for longer according to the preference.
4. Let it rest on a chopping board for 2 minutes then slice.
5. Pour the teppanyaki sauce over the beef, sprinkle the spring onions, and serve.
