Beef Satay served with peanut sauce

INGREDIENTS
- 2 foodhaus Black Angus sirloin steak
- For the marinade:
- ⅓ cup 45g brown sugar*
- ⅓ cup soy sauce
- 100ml white sweet wine*
- 1 star anise*
- 1 cinnamon stick*
- 1 tbsp Ardo Red Chili Diced
- For the peanut butter sauce:
- 200g Healthy Nut Butters Peanut Butter
- 1 tsp Ardo diced ginger
- 4 tbsp vegetable oil*
- 1 tsp sesame seeds*
- 2 chili peppers, sliced*
- lime wedges, to serve*
METHOD
1. Place the sugar, soy sauce, sweet white wine, star anise, cinnamon, chili and 100ml water into a pan. Bring to the boil, then remove from the heat and cool.
2. Slice the steaks into thin strips, about 5mm wide, and place in the marinade. Leave in the fridge overnight.
3. Remove the beef strips from the marinade.
4. Pour 100ml of the marinade into a small pan along with the peanut butter and ginger.
5. Cook over low heat, letting it bubble for at least 5 mins.Add a little water if it is necessary.
6. To cook the satay, thread the beef strips onto skewers.
7. Mix 4 tbsp of the peanut sauce with the vegetable oil and brush all over the beef.
8. Heat a griddle pan until really hot, then cook the beef for about 7-10 mins, turning it until cooked all over. Do this in batches, so keep them warm in a low oven.
9. Sprinkle with sesame seeds and serve with peanut dipping sauce, chili slices and lime wedges.
