INGREDIENTS
- 400g tortellini
- 3 tbsp olive oil
- 1/3 cup Ardo shallots
- 1 tsp Ardo diced garlic
- 1/3 cup finely chopped sun-dried tomatoes
- 1 cup Ardo spinach
- 1 tsp tomato paste (optional)
- 2 tbsp cream cheese
- 1/2 cup grated Parmesan
METHOD
1. Boil the tortellini according to the package instructions.
2. In a pan, sauté the shallots, garlic, and chopped sun-dried tomatoes for 2-3 minutes in the olive oil.
3. Add the spinach and cook for an additional 2-4 minutes. Then, add the sun-dried tomatoes and optional tomato paste.
4. Stir in the cream cheese and a bit of the water from the tortellini pot. Mix until the cream cheese melts.
5.Add the boiled tortellini and a generous amount of grated Parmesan. Mix everything together and it's ready to serve!
