Lobster tail on a brioche bun with spicy mayo

INGREDIENTS
- Ingredients:
- 2 pieces of lobster tail 300g
- 1 packet of mini burger buns 12 x 25g
- 2 sticks of celery, finely chopped
- 1 spring onion, finely chopped
- Juice and zest of one lemon
- 1 tbsp of Horio Extra Virgin Olive Oil
- 2 tsp Maldon sea salt
- ½ tsp Maldon pepper
- Ingredients for Homemade Mayonnaise:
- 1 egg
- ½ tbsp lemon juice
- 1 tbsp TOP vinegar apple 500ml
- 1 tsp Dijon mustard 200g
- ½ tsp Μaldon sea salt
- 1 glass of sunflower oil
- ½ tsp smoked hot paprika
METHOD
1. In a saucepan, add water up to halfway and add one tablespoon of salt. Place the stove over medium-high heat.
2. When the water starts boiling, put the lobster tails in after defrosting them and cook for 8-9 minutes.
3. Then remove them to a bowl of water and ice to stop cooking and cool.
4. At the same time, prepare the rest of the ingredients and place them in a large bowl.
5. After the lobster tails have cooled, peel them and cut them vertically in half and then into small pieces.
6. Add the lobster pieces to the bowl with the rest of the ingredients, mix with a spoon and set aside until you are ready to make the mayonnaise.
7. In a narrow and tall pot, add all the ingredients for the mayonnaise and put the hand blender in, start from the bottom and grind the mixture by pulling the blender slowly and steadily upwards and the mayonnaise is ready.
8. Add 2-3 tablespoons of the mayonnaise into the lobster mixture and blend until all of our ingredients are combined.
9. Finally, cut the buns on top in a straight line and fill them with the lobster mixture and serve!
