Gnocchi salad

Method

  1. Bring a pot of water to a boil and cook the gnocchi for 1-2 minutes or until they float to the surface. Drain and set aside.
  2. In a skillet, lightly sear the halved cherry tomatoes over medium heat until they start to soften and release their juices. Remove from heat and set aside.
  3. In a large bowl, combine the salad leaves, cooked gnocchi, chopped mozzarella, and seared cherry tomatoes.
  4. Add torn basil leaves for extra flavor and freshness.
  5. Drizzle olive oil over the salad and season with Maldon salt and pepper to taste.
  6. Toss gently to combine all the ingredients and ensure they are coated in the dressing.
  7. Serve the salad immediately as a side dish or light meal.
