Beef Stroganoff

INGREDIENTS

  • 2 packets (800gr) of black angus fillet beef thinly sliced into strips
  • 1 tbsp Lurpak butter
  • 1,5 cups of of foodhaus chopped onion
  • 2 tbps of chopped Ardo garlic
  • 1 packet of Mycorex packet of sliced mushrooms
  • 1 tsp Maldon salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1-2 tbsp dijon mustard 2 for added flavor
  • 2 tbsp Plain flour
  • 2 cups beef broth ( could add more if you want it runnier)
  • 3/4 cup of zita Greek yoghurt
  • 3 tsp Worcestershire sauce
  • 1 tsp La chinata paprika
  • 1Tbsp of frozen Ardo parsley chopped and some for garnish
  • 1 cup of foodhaus basmati rice measured uncooked
  • 2 cups Ardo frozen broccoli as a side dish
  • salt and pepper to taste

METHOD

1. Prepare the rice in a pan by adding the rice and water and allowing it to cook. 

2. Make sure your beef is thinly sliced and all your ingredients are prepared. Season the beef with salt and pepper. 

3. Add the butter in a large wok or pan over medium-high heat. Add the beef strips and cook until browned on all sides, approx. 2 minutes each side to give a good sear. Remove the beef from the pan  and set aside.

4. In the same pan add a little more butter and add the onions, garlic, paprika and mushrooms. Sauté until the onions are translucent and the mushrooms are browned. Season with salt and pepper.

5. Stir in the Dijon mustard and flour to coat the vegetables, cooking for 1-2 minutes. Gradually whisk in the beef broth, ensuring there are no lumps. Bring the mixture to a simmer and let it thicken.

6. Add the Greek yogurt, Worcestershire sauce and continue stirring  until the yogurt has fully melted into the sauce. 

7. Reduce heat and add cream. Stir and cook for 5 minutes.

8. Add the beef to the pan , stir to combine and cook for an additional 3-4 minutes, or until the beef is cooked to your liking and the sauce is creamy.

9. Plate the rice in a dish and add the beef stroganoff and add some steamed broccoli on the side . Enjoy !
