INGREDIENTS
- 1 foodhaus suckling pig carre, defrost
- 3 tsp Epic Spice Mediterranean Roast Rub
- 2 tsp Maldon sea salt flakes
- 1 tsp Maldon perfectly crushed pepper
- 1 kg foodhaus Parisian potatoes
- 2 tsp Chorio extra virgin olive oil
METHOD
1. Preheat the oven to 220°C.
2. In a small bowl mix Epic Spice Mediterranean roast rub, salt and pepper. Set aside.
3. Pat the pork dry with absorbent paper.
4. Rub well with olive oil and spice mixture and place it on a baking tray.
5. Add potatoes to the tray around the pork. Season with salt and pepper and drizzle with olive oil.
6. Roast for 30 minutes. Reduce heat to 200°C, turn the potatoes and roast for a further 1 hour 30 minutes or until the pork and potatoes are cooked through.
