Chicken thighs breaded with panko breadcrumbs and mustard sauce

INGREDIENTS
- 1 package foodhaus boneless chicken thighs (approx. 1300 grams)
- 1 tsp Maldon sea salt
- 1 tsp Maldon pepper
- For panko breadcrumbs mix:
- 3/4 package Panko breadcrumbs
- 3/4 cup grated parmesan
- 2 tsp Epic Spice Mediterranean roasting rub
- 150 ml Chorio olive oil
- Egg mixture:
- 2 beaten eggs
- 2 tbsp honey mustard
- Mustard sauce:
- 1 tbsp Dijon mustard
- 2 tbsp Blossom honey
- 1 tsp white vinegar
- 60 gr Develey mayonnaise
- 60gr yoghurt
METHOD
1. Prepare the mustard sauce and refrigerate it. 2. Season the chicken with salt and pepper, dip it into the egg mixture and then into the panko breadcrumbs mixture!
3. Spray with a little olive oil and bake in a preheated air fryer at 175 degrees for about 18 minutes. Meanwhile, we turn our chicken!
Serve with mustard sauce, potatoes or rice. Easy, quick, delicious without frying.
