Easter biscuits

INGREDIENTS

  • 250g Lurpak unsalted butter
  • 2 cups of white sugar*
  • 4 eggs
  • 1/2 cup of 1.5% fresh milk Charalambides Kristis
  • 1/2 cup of Kampos Chiou orange juice
  • 1 orange (zest)
  • 1kg of Caputo flour ( all purpose flour)
  • 4 tbp baking powder*
  • 2 vanilla sachets*
  • 1/2 tsp baking soda*
  • 1/2 tsp Maldon salt
  • 1 egg york ( with 1tbsp water)

METHOD

1. In a large bowl, mix the butter and sugar very well with a hand mixer.

2. Add and whisk the eggs one by one. Add the milk, orange juice and orange zest, mix and set aside.

3. In another bowl, mix half the flour, baking powder, vanilla, baking soda and salt.

4. Start adding the one mixture to the other and mix. Add all the flour in the bowl and continue adding the rest of the flour little by little. Put as much as necessary to make the dough, which should not become too hard, but neither too sticky.

5. Let the dough rest for a quarter of an hour, shape the cookies into the shape you like, considering 30 g. dough for each cookie.

6. Transfer to baking trays with greaseproof paper and brush with the diluted yolk

7. Bake each pan separately in a preheated oven at 180ºC in the air for about 20 minutes.

8. Let them cool and serve.
