Whole Turkey with English Stuffing

INGREDIENTS

  • For the turkey:
  • 1 whole turkey
  • 2 tbsp olive oil Koroneiki variety 1L
  • 4 cloves of garlic finely chopped
  • 2 oranges Juice and zest
  • 1 tbsp Alion rosemary 30g finely chopped
  • 1 tbsp Alion thyme 30g finely chopped
  • 1 packet of Lurpak unsalted butter 250g at room temperature
  • 3 tsp Maldon sea salt flakes 250g
  • 1 tsp Maldon pepper 50g
  • 2 cups of chicken broth*
  • For the filling:
  • 1 loaf of bread (does not need to be fresh), cut into cubes (preferably village bread)
  • 4 tbsp Horio olive oil Koroneiki variety 1L
  • 4 tbsp diced onion 500g
  • 2 tbsp Ardo diced garlic 250g
  • 4 tbsp Ardo parsley 250g
  • 1 cup of Ardo chestnuts 1kg cut into small pieces
  • 1 cup chopped walnuts
  • 1 tsp ground cinnamon*
  • 2 tsp Maldon sea salt flakes 250g
  • 1/2 tsp Maldon pepper 50g
  • 1-2 cups chicken stock (as needed)*

METHOD

Preparing the turkey:

1.Preheat oven to 165°C. In a bowl, combine the olive oil, garlic, orange zest and juice, rosemary, thyme, butter, salt and pepper. Brush the mixture all over the turkey, including the skin where possible.

For the filling:

2.In a large frying pan, heat the olive oil over medium heat. Add the onion, garlic, salt and pepper and sauté until soft. Add the chestnuts and the walnuts and remove from the heat.

3. Add the chicken stock to moisten the mixture, but not completely wet, and set aside.

Stuff the turkey:

4.Stuff the turkey with the stuffing mixture. If there is leftover stuffing, you can roast it separately in a pan with a little olive oil.

5. Tie the turkey's legs and fold the wings under the body.

For the baking:

6. Place the turkey breast side up on a rack on a baking sheet. Place the chicken stock in the bottom of the pan.

8. Bake the turkey for about 3 hours or until the internal temperature reaches 74°C. Every 30 minutes drizzle the top of the turkey with the liquid in the pan.

9.If the skin starts to turn brown, cover the turkey with foil.

For the serving:

10. Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before serving.

11. Serve with the stuffing and your favorite side dishes!
