Caramelized roasted duck with orange and cabbage confit

INGREDIENTS

  • For the duck:
  • 1 whole duck (approx. 1.8-2.3 kg)
  • 1 tbsp Maldon sea salt flakes 250g
  • 1 tsp Maldon black pepper 50g
  • Zest and juice of 2 oranges
  • 3 tsp Ardo diced garlic 250g
  • 2 tbsp flower honey - thyme 480g
  • 2 tbsp Kikkoman soy sauce with less salt 150ml
  • 2 tbsp TOP apple cider vinegar 500ml
  • 30g Alion thyme (for filling)
  • For the caramelized cabbage:
  • 1 large bowl of red cabbage thinly sliced
  • 2 tbsp Lurpak unsalted butter 250g
  • 4 tbsp Ardo shallot 250g
  • 100g Ardo raspberries 300g
  • 2 tbsp brown sugar*
  • 1 tbsp TOP apple cider vinegar 500ml
  • 1/2 cup orange juice
  • 1 tsp Maldon sea salt flakes 250g
  • 1/2 tsp Maldon black pepper 50g
  • 1 orange zest

METHOD

1.Preheat the oven to 170°C.

2. Rinse the duck and dry it with kitchen paper. Remove any excess fat. Brush and rub the duck with the sea salt, pepper and the maple apple rub.

3.In a bowl, combine the orange zest and juice, chopped garlic, honey, soy sauce and vinegar. Keep a little to coat the duck.

4.Fill the inner cavity of the duck with fresh thyme sprigs.Place the duck on a rack on a baking sheet, breast side up. Bake for about 1:30 hour. If more time is needed, bake accordingly.

5. Brush the duck with the reserved marinade every 20 minutes.

6. Add beef stock and cook 7-10 minutes

7. Reduce heat and add cream. Stir and cook for 5 minutes.Increase the oven temperature to 220°C for the last 15-20 minutes to caramelize the skin and make it golden and crispy.

For the caramelized cabbage

8. In a large pan, melt the butter over medium heat. Add the chopped onion and cook until soft.

9. Add the cabbage and brown sugar, cooking until the cabbage is wilted and tender.

10.Add the orange juice, zest, raspberries, vinegar, salt and pepper. Cook for an additional 15-20 minutes until the cabbage is caramelized and the flavors are combined.

11.Cut the duck and serve with the caramelized cabbage.
