Shrimp Boil Pasta

Method
1.Peel and de-vein the shrimp, keeping the shells in a separate bowl. Add some olive oil in a pan and add the shrimp shells, cooking for a few minutes until they turn pink.
2.Add the wine, tomato paste and water and boil for about 10 minutes. Strain the broth to remove the shells and place them aside.
3.Add the pasta to boiling water and in a new pan add the butter, shallots and garlic along with all the seasoning, salt and pepper, cooking for a few minutes until soft. Add the broth in the same pan and boil for 5-10 minutes or as needed for the broth to become more concentrated.
4.Add the clean shrimps in the broth for 2-3 minutes or until they are fully cooked. Finally, add the cooked pasta, serve and enjoy!
5.Optionally you can serve it with a generous amount of grated parmesan cheese for that extra kick.
