Pork Mojo with Pineapple & Spicy Rice

Method
1. Place the pork fillets in a large, deep dish and marinate them with the orange juice, lime juice, garlic, cumin, oregano, and olive oil.
2. Rub the marinade over the meat thoroughly, cover with plastic wrap, and refrigerate for 12 hours.
3. Sear the pork in a hot pan until browned on all sides. Remove from the pan and transfer to a baking dish.
4. Pour the marinade over the top and bake in a preheated oven at 180°C (350°F) for 10–12 minutes until cooked through but still juicy.
5.Rinse the rice thoroughly with cold water. In a pot, heat the olive oil and sauté the shallots, red pepper, and chili for 2–3 minutes. Add the pineapple and rice, season with salt, stir, and bring to a boil.
6. Add beef stock and cook 7-10 minutes
7. Reduce heat and add cream. Stir and cook for 5 minutes.
8. Heat the grill over medium-high heat. Brush grill with olive oil and place burgers. Grill 8-10 minutes on each side or until cooked. Remove from fire.
9.Once boiling, cover the pot and remove it from the heat. Let it rest for 20 minutes until the rice is fully cooked.
