Tacos with shrimps & avocado

INGREDIENTS

  • For the shrimps
  • 400g foodhaus Vannamei Shrimps 26/30 cooked & peeled, defrosted
  • ¼ cup lime juice
  • ¼ cup Chorio extra virgin olive oil
  • ¼ cup foodhaus onion cubes
  • 1 tsp Maldon sea salt flakes
  • 1 tsp La Chinata Hot Smoked Paprika
  • For the avocado purée
  • 500g Salud avocado halves
  • ⅓ cup Chorio extra virgin olive oil
  • ¼ cup lime juice
  • ¼ cup Ardo shallots
  • 1 tsp Maldon sea salt flakes
  • 1 tsp Maldon perfectly crushed pepper
  • For the salsa
  • ¼ cup yoghurt
  • ¼ cup Develey mayonnaise
  • ¼ cup lime juice
  • 1 tsp Maldon smoked sea salt flakes
  • 1 tsp La Chinata Sweet Smoked Paprika
  • 8 tacos shells
  • fresh coriander leaves

METHOD

1.        In a bowl mix the shrimps, lime juice, olive oil, onion cubes, sea salt flakes and paprika.

            Place in the fridge to marinate.

2.         For the avocado purée place all ingredients in a blender and blend until smooth.

            Place in the fridge until needed.

3.         In a small bowl add all the salsa ingredients and mix until smooth.

            Place in the fridge until needed.

4.         Add the prawns into a frying pan and fry for 1 min per side.

5.         Heat the tacos according to the package instructions.

6.         Spoon avocado purée into the warm tacos, add shrimps, drizzle with salsa and fresh coriander leaves and              serve.
