Fresh Salad with Snow Crab & Hollandaise sauce

INGREDIENTS

For the Hollandaise sauce:
  • ¾ cup Lurpak unsalted butter
  • 3 large egg yolks
  • 2 tbsp lemon juice
  • Maldon sea salt flakes
  • Maldon perfectly crushed pepper
For the salad:
  • 1 package Snow Crab 30/70 250g
  • 1 package Alion daily salad 250g
  • 2 cucumbers chorafiou
  • 2 fresh avocado

METHOD

Defrost the snow crab according to the package instructions.

For the Hollandaise sauce:

2.         Melt the butter in a small pot slowly but do not boil.

3.         Add the egg yolks, lemon juice, a pinch of salt and pepper into a blender.

4.         Blend the egg yolk mixture for 30 seconds at a medium-high speed, until its colour lightens.

5.         Turn the blender speed to low and while its still running, slowly drizzle in the melted butter.

6.         Continue to blend for a few more seconds after the butter is incorporated.

7.         Turn off the blender, taste the sauce and season accordingly.

Make the salad:

8.         Divide the fresh salad leaves into 4 plates.

9.         Slice cucumbers with a mandolin slicer or a peeler and divide the slices into the plates. Cut the avocados in half, remove the pit, skin and slice.

10.       Place each half into the 4 plates.

11.       Divide the snow crab and place it on top.

12.       Drizzle the salads with hollandaise sauce and serve immediately.
